Quinta do Carmo is located the wine-making center of all Alentejo wines, Bacalhôa Vinhos de Portugal, SA. Equipped with modern technology, it has a capacity of 3 million liters and an operating system that maximizes smoothness in the transport of grapes, wine grapes and wines, ensuring stability throughout the winemaking process.
The Alentejo wines are entirely produced with their own grapes, the control of the production process is total from the grape to the bottle. There are around 350ha spread by various properties located in Estremoz, Arronches (Portalegre), Borba and Arraiolos.
Its vineyards are very rich: the vine varieties traditionally planted in the Alentejo, such as Aragonez, Trincadeira, Alfrocheiro, Alicante Bouschet, or new varieties, such as Touriga Nacional, Syrah and Cabernet Sauvignon.
In these different terroirs, able to produce grapes of the best quality, each breed acquires, in each vineyard, a personality of its own.
Small-capacity fermentation vats (ie 10 tonnes of grapes) allow the separate vinification of several vine varieties per vineyard. There is also a special vinification unit adapted to manual harvesting where the fermentation takes place in robotic wineries.
