10 - 13ºC
Vinification
Soft stalk-removal and crushing. Blend of the 2 grapes. Gentle press and natural decantation at low temperatures for 24h. Fermentation of the 60% of the blend in stainless steel vats at low temperature
Ageing
Fermentation of 40% of the blend in 500L french barrels (2nd year) and aging for 6 months with frequently battonage
