Casa da Passarella Enxertia Jaen is a unique red wine from Portugal's Dão region, produced by Casa da Passarella. This wine is a single-varietal, made 100% from the Jaen grape (also known as Mencía in Spain). Its winemaking involves fermentation in cement vats with spontaneous fermentation and pre- and post-fermentation maceration. The wine then ages in oak barrels for about 12 months, followed by approximately 18 months in the bottle, ensuring a minimalist and natural stabilization process that preserves the grape's natural elegance and its connection to the terroir.
When tasting, expect an opaque red colour, sometimes with intense ruby tones. The aroma is very expressive and true to the grape, with notes of red fruits (cherries, blackberries, blueberries, wild strawberries) and black fruits, spicy hints of black pepper, vegetal notes, and a distinctive "Chinese ink" character. Toasted and smoky notes may also appear. On the palate, it is elegant and smooth, with a silky texture and easy, very soft tannins. It shows great balance and balanced acidity, leading to a long and persistent finish that reveals the full elegance of the grape and terroir. This wine is an excellent gastronomic partner, ideal for red meat dishes (grilled, roasted), more structured poultry and white meats, cured cheeses, game dishes, and rich pasta sauces.
