Tasting Notes
Topaz with greenish lavas. Aroma floral to roses, citrus, spices and evolution. Taste round, very soft and fresh, great intensity. Very long end.

Vinification
Intense selection of bunches followed by a pre-fermentative maceration for 5 days, very slow fermentation followed by a post-fermentative maceration of 6 long months.
Ageing
The final stage is made in barrels of 225 liters of French oak used.

Well-structured acidity and body in harmony with the sweetness and tannins. Sweet wine, very full-bodied and rich in old cask aromas where toasted almonds, vanilla with hints of iodine, tobacco and caramel predominate.</p> <p>The wine is aged in French and American oak casks, in the traditional process until bottling.</p> <p>This wine is delicious with dried fruit, especially walnuts, almonds and hazelnuts. It pairs well with dried fruit cakes, honey cakes, butter biscuits, dark or milk chocolate, pralines and petit-fours. It's a wine that is elegant with Portuguese and blue cheeses or even simply with a good cigar</p>

<p></p><p>This fortified wine dates back to the 14th century and reached its golden period by the laborious hands and sharp mind of Sebastião José de Carvalho e Melo - Marquês de Pombal and Conde de Oeiras. Carcavelos' wine ran the world. It entered the most varied cultures. It has even given part of its 'soul' to Port wine in order to give it a 'body' and a superior taste.
