Quinta do Poço do Lobo Baga Bruto, produced by Caves São João in Portugal’s Bairrada DOC, is a 100% Baga sparkling wine made using the traditional method. Only the first, gently pressed free-run juice is used. Fermentation lasts about 15 days in stainless steel under controlled temperatures, followed by secondary fermentation in the bottle. It then ages on lees for around 28 months before disgorgement, resulting in fine mousse and excellent complexity
In the glass, Quinta do Poço do Lobo Baga Bruto displays a straw-yellow colour with subtle silvery or leaden hues. The aroma is intense, revealing a combination of fresh and dried fruit notes, along with toast and biscuit. On the palate, it's very fresh, bone-dry, and long, confirming the aromas perceived on the nose. It is ideal served at 8‑9 °C, and pairs effortlessly with canapés, lean fish or meats, delivering a refined and persistent finish
