<p></p><p>Quinta de São José de Peramanca is located five kilometres from Évora, on National Road 114. The large and traditional house, marked by baroque architecture, and the church of San José adjacent to it facilitate identification. With 34 hectares, the Quinta has in the manor house and in its vineyard its greatest patrimony.</p> <p>As for the peculiar name of the Quinta "Peramanca" (Pedra-Manca), it means "oscillating stone, not very safe", is explained by the existence in the region of large granite stones in oscillating balance. Since Roman times and over the centuries, the surroundings to the west of Évora have been considered as one of the most important regions producing quality wine, and the area has become known as "Terras de Peramanca", given the abundance of these oscillating stones.</p>

<p></p><p>On the hot plains of the Baixo Alentejo, just a few kilometres from the city of Beja, is one of the oldest wine estates in the region. Its vineyards represent decades of history that Henrique Uva has preserved and farmed for many years and which he always wanted to develop as an independent producer.<br />In 2004, he achieved his dream, with the project that goes by the name of Henrique Uva/Herdade da Mingorra. The Winery is surrounded by 1,400 hectares of a landscape that can be considered exuberant, such is the diversity of plants and fauna, with several river basins forming veritable oases. The Winery is a true place of worship. A place where modernity and functionality can be found alongside indelible traditional techniques.</p>
<p></p> <p>In February 2009, João Afonso and his family acquired a small farm of 6 hectares in the Natural Park of Serra de S. Mamede. It is located in the amphitheater of the village of Reguengo at an altitude of 600 meters, looking south and Alentejo at lose sight of The property has 3.9 hectares of very old vineyard (in 1932 already existed) divided between plots of white grapes (16) and paints (12), all mixed and consociated with olive groves (which does not allow Alentejo DOC wine production) .</p> <p>Biodiversity and ecology are the engines of the project: the current type of agriculture is organic (Ecocert certification) and the aim is to practice biodynamic agriculture at 100% in the next 3 years. All agricultural work - in the treatment and maintenance of soils and plants - is manual.</p>
<p></p><p>Since 2005 the company is called Kompassus, and still has a philosophy of wine production based on roots and family traditions. It is dedicated to the production of wines of excellence sustained by organic production methods and sustainable viticulture practices. The company is owned by João Póvoa, an ophthalmologist by profession, but a farmer by passion</p>
<p></p><p>Kompassus Cercial White Wine presents citrus-coloured wine with greenish tones. Mineral notes, citrus fruit and some vegetal flavours. A very fresh wine, but with volume in the mouth and a long finish. Very gastronomic.</p> <p>Cercial harvested in the first week of September. Pre-fermentation skin maceration for 4 hours, followed by gentle pressing. Start of fermentation in stainless steel at controlled temperature. Final fermentation in used 400 litre French oak barrels for 10 months with batonnage.</p>

<p></p> <p>Sidónio de Sousa Vinha do Autor reveals intense and bright ruby colour, slightly smoky berry aroma. On the palate we are surprised by its vibrant acidity and freshness, with tannins that are present but already partially soft, due to the long ageing in vats, without showing any presence of wood in the wine. It's a wine that stands out for its persistence and ability to age in the bottle for another 10 to 15 years. It should be consumed in moderation.</p>
