    It is excellent as an after dinner drink and also very good with fruit, milk chocolate, cakes and hard cheeses
    Tasting Notes
    Clear, amber colour with tinges of gold; a bouquet of dried fruit, vanilla, wood and toffee with a smooth, medium-sweet finish and an excellent balance between the fruit and acidity.
    Vinification
    Fermentation off the skins with natural yeast at temperatures between 18°C - 21°C in temperature controlled stainless steel tanks. After 3 days, fortification with grape brandy takes place, arresting fermentation at the desired degree of sweetness
    Ageing
    5 year old Bual in American oak casks in the traditional 'Canteiro' system. Over the years the wine is transferred from the top floors to the middle floors and eventually to the ground floor where it is cooler

Well-structured acidity and body in harmony with the sweetness and tannins. Sweet wine, very full-bodied and rich in old cask aromas where toasted almonds, vanilla with hints of iodine, tobacco and caramel predominate.</p> <p>The wine is aged in French and American oak casks, in the traditional process until bottling.</p> <p>This wine is delicious with dried fruit, especially walnuts, almonds and hazelnuts. It pairs well with dried fruit cakes, honey cakes, butter biscuits, dark or milk chocolate, pralines and petit-fours. It's a wine that is elegant with Portuguese and blue cheeses or even simply with a good cigar</p>

In February of 2008 I transferred the wine to bottles of 60 liters where it has maintained until today. In this way it was possible to control the rapid concentration that this wine recorded, while it was in the process of aging in the pipes during 29 years, maintaining the balance between the sweetness and the acidity that I believe to be the ideal in this wine.</p>
