    Herdade do Sobroso Élevage White Wine is a distinguished white wine from Portugal's Alentejo region, specifically the Vidigueira sub-region. Its name, "Élevage," highlights its meticulous aging process, which contributes significantly to its complex character. Crafted primarily from Antão Vaz and Perrum grapes, this wine undergoes a unique vinification that includes hand-picking, careful blending, and a 12-month maturation period in amphorae with "batonnage" (lees stirring), all contributing to its refined profile.

    Élevage White presents a delicate yet profound aromatic bouquet, featuring prominent notes of citrus blossom, stone fruit, and often intriguing hints of maple syrup or damp earth, lending a distinct minerality. The palate is equally impressive, offering remarkable fruit purity, a well-defined structure, and a precise, refreshing minerality. Its rich, creamy texture leads to an exceptionally long finish, often with a subtle mentholated freshness, leaving a memorable impression.

    This acclaimed wine is best enjoyed chilled, between 10ºC and 12ºC. It's an excellent companion for a variety of dishes, including seafood, grilled fish, fresh salads, and mild cheeses. On the palate it has good acidity, soft but firm tannins and a long finish.</p> <p>The grapes are destemmed and carefully selected at the hand-picking table. After crushing, they are trodden in marble presses using the traditional foot treading method.  Transfer to stainless steel vats where the alcoholic fermentation finishes. This is followed by 12 days of post-fermentation maceration.</p>
