<p>The Reserva das Pedras wines are born from old vines planted in the Charneca zone. With the mission to respect our history, we preserve these iconic vineyards planted on a soil that was once traversed by the River Tejo, leaving its mark in the form of rounded pebbles. This gives rise to wines with an elegant and fresh profile that distinctly express the natural harmony between the soil, climate, and plants. In order to accurately determine the harvest date, we value the control of maturation with frequent sample collection. We assess and cross various parameters beyond the essentials with the goal of certifying the superior quality of these wines. <br /><br />Manual harvest in 18 kg boxes, grape selection on the sorting table directly to the press, gentle and rapid pressing to avoid the oxidation of the must and excess of vegetable components. Static clarification for two days with the lees in suspension. Fermentation at 14ºC. After fermentation, 20% of the wine was aged in used French oak barrels for 5 months. The wine was then stabilized and filtered.</p>
