Quinta do Poço do Lobo Tinto Bruto produced by Caves São João in Portugal’s Bairrada DOC, is a vibrant and elegant red sparkling wine made from a blend of Baga, Touriga Nacional, and Cabernet Sauvignon. Fermented following the traditional method, the secondary fermentation occurs in bottle, with about 12 to 24 months of ageing on lees at cool temperatures (14 °C), depending on the batch. The base wine undergoes malolactic fermentation, ensuring balance and softness in the final bubbly expression
In the glass, Quinta do Poço do Lobo Tinto Bruto presents a deep ruby colour and an intense bouquet of forest berries, balsamic and anis-like notes, along with vegetal and peppery nuances—reflective of the Cabernet Sauvignon character. On the palate, it offers a delicate and fresh attack, moderate acidity, creamy mousse, and good persistence. Ideal when served at 8–12 °C, this sparkling red pairs beautifully with hearty Portuguese dishes such as game, cabidela, roast meats, and richly seasoned cuisine
