<p>Quinta da Extrema Ensaios Extremes Touriga Nacional Red Wine is crafted from the finest parcels of Touriga Nacional grapes, situated at an altitude of 450 meters on transitional granite and slate soils. This unique positioning of the vineyards provides the grapes with optimal maturation and balance. The selection and harvesting of the grapes are done manually, ensuring that only the best are placed in 20 kg boxes for transportation. Once they reach the winery, the grapes undergo cold maceration for 48 hours in stainless steel tanks. The fermentation process then begins, lasting between 7 to 10 days at a controlled temperature of 23ºC. An integral part of the process is malolactic fermentation in new French oak barrels which contributes to the robust and complex flavor profile of the wine.</p>

<p>Quinta da Extrema Ensaios Extremes Vinhas de Altitude White Wine is carefully crafted from grapes harvested from the highest altitude vineyards, where Rabigato, Gouveio, and Viosinho thrive in transitional soils between granite and shale. This unique terrain infuses the wine with a distinct freshness and minerality. The grapes are meticulously hand-picked and placed in 20kg boxes, ensuring they arrive at the winery in pristine condition. At the winery, the winemaking process takes place in French oak barrels in a manner designed to respect the natural expression of the grape varieties and the terroir. After aging for 10 months in the French oak barrels, the wine is bottled and matures for a further year before it is ready for enjoyment.</p>

<p>Quinta da Extrema Ensaios Extremes Vinhas de Altitude Red Wine is produced from grapes which come from the high vineyards of Quinta da Extrema. These vineyards are planted with Touriga Nacional, Touriga Francesa, and Tinta Francisca grapes, carefully chosen from select parcels for their soil profile and sun exposure. The harvest is done manually, with transportation in 20kg boxes, ensuring utmost respect for the integrity of the fruit. In the winery, the wine is crafted in stainless steel tanks and French oak barrels, a process that emphasizes the purity of the fruit and the structure of the wine. <br /><br />After aging for 24 months in new French oak barrels, the wine is then bottled and matures for another year before it is ready to be enjoyed.</p>
