<p>Frei João Clássico White is a traditional wine from Portugal's Bairrada DOC, produced by Caves São João. It’s crafted primarily from a blend of Cercial (70%) and Bical (30%), two indigenous grape varieties that thrive in the cool, maritime-influenced climate of the region. The wine is partially aged in oak, adding complexity and depth to its expression while maintaining a vibrant, structured profile true to Bairrada's classical style.</p> <p>On the nose, it offers elegant and layered aromas of green apple, pear, and citrus, complemented by floral, mineral, and subtle spice notes from barrel aging. The palate is dry, crisp, and linear, with bright acidity and a clean, persistent finish. With moderate alcohol (around 12% vol), this wine is refreshing yet structured, making it a great pairing for grilled fish, seafood rice, and soft cheeses—and an excellent candidate for aging.</p>

<p></p><p>Kompassus Cercial White Wine presents citrus-coloured wine with greenish tones. Mineral notes, citrus fruit and some vegetal flavours. A very fresh wine, but with volume in the mouth and a long finish. Very gastronomic.</p> <p>Cercial harvested in the first week of September. Pre-fermentation skin maceration for 4 hours, followed by gentle pressing. Start of fermentation in stainless steel at controlled temperature. Final fermentation in used 400 litre French oak barrels for 10 months with batonnage.</p>
