    Casa da Passarella Enxertia Tinta Roriz is a distinctive red wine from the Dão region of Portugal, produced by the acclaimed Casa da Passarella. This wine is part of the "Enxertia" line, dedicated to exploring and expressing the purity and optimal performance of a specific grape variety each vintage. It is a single-varietal wine, made 100% from the Tinta Roriz grape (also known as Aragonês or Tempranillo). Winemaking involves fermentation in cement vats with spontaneous fermentation and pre- and post-fermentation maceration, followed by aging in oak barrels (typically for 12 months) and then bottle aging (around 18 months), ensuring a minimalist and natural stabilization process.

    When tasting, expect an opaque red or intense ruby color. The aroma is characterful, with restrained fruit (black fruit, blackcurrant), notes of phenolic maceration, light smokiness, spicy touches (pepper, cinnamon), and sometimes hints of Chinese ink. On the palate, it reveals good, vigorous tannins that lead to a spicy, broad, and incisive taste that pleasantly grips the mouth. It possesses lively and captivating acidity, with a robust and textured body. The finish is long, dry, and fresh, sometimes with a slight bitter note contrasting the fruit's sweetness, and remarkable persistence. This wine's structure and spicy, fruity profile make it an excellent gastronomic partner, ideal for roasted or grilled red meats, game dishes, aged cheeses, and rich stews.
