<h2 id="what-this-dao-rose-is">What this Dão rosé is</h2><p>Pretexto Palhete 2021 is a Portuguese Dão rosé produced via co-fermentation of 70% red grapes (Jaen and Alfrocheiro) and 30% white grapes (Encruzado and Bical). Sourced from altitude vineyards on granitic soils, it showcases the balance and complexity characteristic of traditional Dão winemaking.</p><h2 id="in-the-glass">In the glass</h2><p>An intense coral-pink colour introduces delicate spice aromas with discreet berry fruit notes. Whole-bunch fermentation contributes subtle green notes that add genuine complexity to the aromatic profile. On the palate, crisp acidity provides freshness and structure, this is a wine built for the table, not the aperitif hour.</p><h2 id="food-pairing-and-serving">Food pairing and serving</h2><p>What makes the difference here is the interplay between the indigenous red and white varieties, delivering sufficient acidity and aromatic lift to pair with light fish dishes, shellfish, fresh salads, and delicate poultry. Serve chilled at 8–10°C to bring out the mineral edge from the granite terroir. To avoid: pairing this with heavily spiced or rich red-meat dishes, which will overwhelm it.</p><h2 id="terroir-and-technical-details">Terroir and technical details</h2><p>Altitude vineyards in the Dão region, where granitic soils and a cool climate slow ripening and preserve acidity in these traditional Portuguese varieties. <p></p><p>Located in Vilar Seco, municipality of Nelas, in the district of Viseu, Quinta da Teixuga is a 30 hectare property.<br />Located in the heart of the Dão Region, it is surrounded by mountainous massifs, such as Serra da Estrela and Caramulo. This location allows excellent thermal amplitudes for a good maturation of the grapes leading to its slow maturation producing wines with rich aromas and good acidity.</p>
