Local white grape varieties are favoured and their multiple facets and viticultural and oenological behaviours are enhanced, combining vines of different ages and installed in different locations on the island.

In the Azores, the unpredictability and rusticity of the climate cannot be avoided, so every year is different, which is why in this project the "wines have to be what each year gives".
