Since 2005 the company is called Kompassus, and still has a philosophy of wine production based on roots and family traditions. It is dedicated to the production of wines of excellence sustained by organic production methods and sustainable viticulture practices. The company is owned by João Póvoa, an ophthalmologist by profession, but a farmer by passion
<p></p><p>Kompassus Cercial White Wine presents citrus-coloured wine with greenish tones. Mineral notes, citrus fruit and some vegetal flavours. A very fresh wine, but with volume in the mouth and a long finish. Very gastronomic.</p> <p>Cercial harvested in the first week of September. Pre-fermentation skin maceration for 4 hours, followed by gentle pressing. Start of fermentation in stainless steel at controlled temperature. Final fermentation in used 400 litre French oak barrels for 10 months with batonnage.</p>
