Herdade Papa Leite My Way Red Wine is a rich and dense blend of Alicante Bouschet, Merlot and Cabernet Sauvignon grape varieties. It boasts an opaque garnet color with violet tones, reflecting its depth and complexity. The aroma is as enticing as the color, with red fruits complemented by notes of vanilla and chocolate, promising a delightful sensory experience. The flavor profile is mature, with a perfectly integrated oak barrel note, creating a dense and persistent taste. The wine has a high alcohol content of 15.5%, with residual sugars of 0.8 g/l, a pH of 3.37, and a total acidity of 7.4 g/l. Only a limited number of bottles were produced, making this wine a unique find: 114 bottles of 1.5L and 3,667 bottles of 0.75L. The wine is produced by Filipe Barreiros Cardoso and winemaker António Madalena.
Serving this wine at a temperature of 16º- 18º C is recommended to fully savor its intricate flavors. It is an excellent choice to accompany strong dishes such as game bean stew, duck rice, hare rice, a partridge dish known as "six hundred devils", a Portuguese steak, or even a board of soft cheeses from Azeitão or Serra. The clay soil in which the grapes were grown lends the wine additional complexity. The grapes were harvested manually in September and transported in 10 kg boxes to prevent crushing. The fermentation process took place in a stainless steel vat for three weeks, with the temperature controlled at 24º C. After alcoholic and malolactic fermentation, the wine was aged for 28 months in new French oak barrels, followed by additional aging in the bottle.
