    Grapes harvested by hand are cooled overnight to 10 ° C, dehaired only 50% before being crushed and go to the mill. Maceration and fermentation for 5 days with steady walking (about 6 hours per day)

    The wine is packed and stored by gravity in stainless steel tanks until bottling.
