Jorge Manuel Pintão foi responsável pela enologia e qualidade da Poças equipa desde 1987. Licencia-se em química, com mestrado em enologia do "Institut d'Oenologie de Bordeaux", estudou no prestigiado Château Giscours no Médoc em Bordeaux. Sua arte é o resultado de muitos prêmios em competições internacionais, como o "Winemaker of Fortified Wine Challenge" do International Wine Challenge em 2001.
