Two streams bring rainwater down from the Serra to keep the ground cool in the torrid Alentejo heat. These vineyards were of such importance that a Papal Bull of 1397 exempted the Paulistas from vineyard taxes and reinforced their importance. This Paulistas White comes from a plot planted in 1969 in coplantation (mixed vineyards), revealing an Alentejo that has been lost in time.

In Zambujeira do Mar, where the high temperatures of the Alentejo are mitigated by the Atlantic, the concentration typical of inland viticulture is balanced by the freshness and humidity of the sea, leading to ideal maturation. The grapes ripen, thus, in a slow and balanced way, with cool and wet winters, mild summers and the constant presence of the sea winds, creating wines where elegance overrides robustness.
