Maynard's Tawny Port Wine
Maymard's Tawny Port is produced by the traditional method. After the manual harvest of overripe grapes, they are partially destemmed and crushed in the lagar, where a slight maceration occurs before alcoholic fermentation (AF). This occurs slowly, at a controlled temperature. The fermentation is stopped by adding brandy at the ideal moment determined by the winemaker, based on the degree of ripeness and desired sweetness. This results in a fortified wine that ages in French oak casks for several years, ranging from 2 to 5 years, with an average of 4 years of aging
