Sparkling

The sparkling wines are distinguished by the presence of carbon dioxide from the secondary fermentation, which gives them their typical "bubble" and foam. Normally sparkling wines have their final stage of fermentation in the bottle (or classical method champenoise). There is also a continuous method where fermentation takes place through the passage of the wine through different tanks (where wine fermentation and aging) and charmat method where fermentation takes place in a closed vessel. Portugal produces variants in sparkling white, red and rosé.
