Vinification
In the Adega, after immediate crushing and stemming, the free-run must (must before pressing) clarified for 18 to 24 hours. Then, the alcoholic fermentation occurred at a controlled temperature of 18ºC for 14 days
<p>The Quinta do Côtto, in Cidadelhe, relatively close to the Régua, is a property of 75 hectares of vineyard and a plot built in the eighteenth century. The owners of the farm, the Montez Champalimaud family, exclusively produced Port wine until the beginning of the 20th century. In 1980 Miguel Champalimaud launched the first Quinta do Côtto Grande Escolha, consolidating the concept of Douro's quinta wines, which are still rare in the region.<br />The Quinta do Côtto brand has grown greatly in notoriety since then, until it became one of the most classic and prestigious references in the Douro region</p>

<p>The wines Cartuxa take their name from the Carthusian monks, who since 1598 have lived a life of solitude and prayer in the Monastery of Santa Maria Scala Coeli</p>
<p>Adega Cooperativa de Vidigueira, Cuba e Alvito was founded in 1960, but its chronology goes far beyond its almost 60 years of existence. Its roots are intertwined with the history of the village itself, and with Vasco da Gama - the Count of Vidigueira, to whom D. Jaime, Duke of Bragança gave the village in 1519. <p>Vinha das Virtudes, a project that has as its main inspiration the seven virtues of the epic poem of Prudencio, a Roman poet who lived between the years 348 and 410. It portrays in Psichomachia a battle between virtues and vices, which illustrates the struggle of soul against the seven deadly sins, in which virtues always triumph. </p>
